來到位於中環的 Old Town老城吃喇沙， Michael先 share一個指定動作：「食喇沙一定要摻摻，即是同時叫油麵及米線兩溝，爽彈細滑兼而有之，先為之食麵高境界。」食喇沙，必呷湯，吸引的橙紅色湯底，每日用上 3小時精煉，材料包括 5斤蝦殼、曬乾並磨成粉的吵喇葉、指天椒、大紅椒、香茅等 10多種材料，當中固然少不得椰漿，新加坡來貨，更香更地道，亦有效中和辣度。配料最佳拍檔乃蝦肉、豆卜、魚條、芽菜，不過絕不會驚喜得過有 day day從泰國運來的新鮮螄蚶，由於螄蚶一定要夠衞生，所以坊間唔係每間喇沙麵店都有得食，少量地每日只入 2kg貨仔，唔會留過夜。索索聲吸麵之餘，千萬別忘了點一杯薏米水下下火，讓口腔盛滿着南洋好風情！
